FUCKIN' MARGARITA CUPCAKES


I've been baking bunches, just not writing about it.  I was about to let this recipe disappear along with the rest until I worked The Margarita Challenge last night. See, here in the Southwest, tequila is as big as wine in Italy. So, naturally, we have large soirees downtown held in large art museum courtyards that host lots of live music, local food, pretty shoes, culinary snobbery, and of course... dangerous amounts of margaritas.  The Cafe is a part of "Tucson Originals", and so we hosted a booth touting our bakery by making Margarita Cupcakes. I've made them before, they're delicious, I was gonna move on. But then I had someone tell me that the cupcakes changed their life. Then someone told me that they were in love with me. Then someone just groaned with happiness. This happened SIX HUNDRED TIMES. I'm not exaggerating; I'm actually rounding down. We were the most popular tables and word got out quickly and... you get the point. SO. Make these, kay? The tequila in the frosting is a punch in the face and the fresh lime juice is absolutely delightful. I didn't invent them, I just made a variation of this recipe but I would HIGHLY recommend adding a pinch of kosher salt into the frosting. I swear to god, it takes them from "goddamnamazing" to "ijustdonthavethewords". Just like that.

  5. I almost didn't look at the recipe because things like this are never vegan. But these are! Vegan! Talk about burying your lead :) I know what I'm bringing to a halloween party next week!

  10. these look great! we have a margarita cupcake at work and though it's good, I always felt that adding salt would just take it to that next level. but that's the downfall of working at a franchised bakery— no changing recipes for me. i'll just have to try these ones at home ;-)
