MAKE YOUR OWN SPRINKLES!


Know this: I love my job.

Not only do I get to geek out bakery style over new recipes, I get to share the excitement with others as I coach them on how to make it all by themselves. Latest gastronomical nerd fest: sprinkles.


It's a lot like royal icing, but with a little carpal tunnel action. You can make several kinds with the same recipe... both the dots (and in my case, chocolate chip looking dots) and the long jimmies. Try this recipe:

2 c. powdered sugar (you might need more)
1 egg white
1 T warm water
pinch of salt
food coloring
and flavor extract if you would like... I didn't use any.

Use a mixer for this one, it gets pretty damn thick. Use the paddle attachment to mix everything except for the sugar. Slowly add the sugar and you'll watch as it becomes a paste. This is the point where it becomes up to you how thick you want it. From my experience, it was better to have it thinner than thicker. You can see the difference in the sprinkles below... the thicker paste made the chocolate chip looking teal guys, and the thinner green one made the perfectly curved dots. ALSO, a consideration is that the thicker paste hurts your hands after squeezing for a while. Unless you wanna do hand exercises for a week in preparation, I would just go with the thinner stuff. Just make sure it will hold a shape.


Next step, do what I did above. I used all sizes of round tips and I liked the medium one the best. When you pipe on to parchment, creating a design is optional... that's just the overachieving art major in me coming out. Another option for the shape is to use a medium to large round tip and pipe long lines. After this dries for 24 hours (this applies for the dots too...no shortcuts, impatient bakers!) you can cut them into your desired length and voila! Jimmies. Visuals here. 


It's hard to tell, but the sprinkles themselves are minuscule and I used the green ones on a chocolate mint cake today. It looked pretty rad. I kinda want to do this again and try making different shapes... flowers, clovers, hearts, stars, clouds... dear god. The options just may be endless.

  2. These look so sweet! You know, in more ways than one. I never would have thought to make my own sprinkles, but it sure would be a good way to control the colours. I'd want to make little lightning bolt ones. For no other reason than they'd be super neat. And delicious on a grey frosted cupcake cloud. Mmm!
