PIE DAY PART II: BLUEBERRY SOUR CREAM PIE WITH PECAN STREUSAL


Yep. More pie. This one is my new favorite fruit one though... holyshitsogood. I guess bananas are fruit too, but you know what I mean (cherry, apple, berry etc). It's fresh, a teensy tangy and mixed with the streusal and pecans... c'mon. 


You can view the last post for a link to the pie crust and whipped cream recipe. You'll need both this time too. Except you won't need to pre-bake the crust. Leave it raw until you put yr filling in:)

The filling is simple. Mix 1 c sour cream, 2 T flour, 3/4 c sugar, 1 t vanilla, 1/4 t salt, and 1 egg until combined. Yeah, all of it together at once. Toldja it was simple. Fold in 2-3 c frozen blueberries. I like more fruit, so I used three. You can also use fresh. Pour mixture into unbaked pie shell and bake for 20 minutes at 350.

While its baking make the pecan streusal: in a small bowl mix 1/3 c flour, 1/2 c rolled oats, 1/2 c brown sugar and 1/2 c chopped pecans. Break 4-5 T of cold butter in and use your fingers to pinch/mix/crumble/rub it in. Do this until its niiiiiice and crumbly and delicious looking. If its too powdery or dry add a little more butter. Continued heat from your hands will also help mix it easily. After baking the pie, sprinkle this on top and bake for another 12 minutes.

As I watched people eat it, I noted a few common reactions: eyes rolling up to the heavens or closing the eyes and moaning. There was some jumping up and down. And there was the part where they chew and leave their mouth open dramatically to show just how delicious it is. Ew.
